This goat cheese is cured for a minimum of 5 months, in which it is regularly turned and the crust is periodically washed in virgin olive oil, which softens the maturing process and gives the cheese its unique characteristics. When cut into triangles, the cheese near the centre has a milky, creamy texture which then develops into a more intense mature-cheese flavour in the middle without losing its buttery notes; finally, nearer the crust, there is a mild influence of virgin olive oil from the province of Córdoba.
